Food at Boston Market generally takes about an hour to cook. It has become, for all intents and purposes, a guessing game in response to outrageous standards imposed by corporate.
A manager can lose their job for having too much by small increments, so it has somehow become preferable in the eyes of corporate to have too little.
None of the employees you see in the store agree with thsee standards, I assure you. However, the manager is just about always stuck with the guessing game unless they willingly incur the wrath of their superiors.
On a normal day, this works fine, but sometimes a concert let's out nearby, or a basketball team is playing that day. There is no way to adequately predict sudden spikes in business that outlay the norm. Sometimes, people just order more meatloaf than normal.
Sometimes, managers just make mistakes when loading the food.
I think it's important to remember that there are people actively working to provide as best as they can, but they are capable of error. More often than not, however, it is the, "I as absolutely can not load more than we will sell for [protein]," that will cause a majority of your out-of-item issues.
In the case that two items are running low, I suspect there was an unforecasted business spike, which is unfortunate, but it happens.
